When I do try to exercise some kind of culinary skill, I try to make the recipes as fail safe as possible because one tiny mishap can subject me to Jerry\u2019s merciless mocking for the next several weeks.&#160; Luckily Grandma Teetsel\u2019s recipe for what she called \u201cSwiss Bread\u201d is one of those safety nets.&#160; Even Jerry cannot find a problem with this bread and after a few loaves he got rid of the bread machine that was using up precious space on our counter-top and left the homemade bread baking to me.&#160; <\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 package of yeast <\/li>\n<li>2 cups of lukewarm water (divided) <\/li>\n<li>4 cups of flour <\/li>\n<li>1 tablespoon of sugar <\/li>\n<li>2 teaspoons of salt <\/li>\n<\/ul>\n<p>Dissolve the yeast in 1 cup of the water.&#160; Let stand for about 10-15 minutes until it looks kind of foamy at the top, like this:<\/p>\n<p><a href=\"http:\/\/ladyjessop.com\/wp-content\/uploads\/2010\/09\/018.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right-width: 0px; display: block; float: none; border-top-width: 0px; border-bottom-width: 0px; margin-left: auto; border-left-width: 0px; margin-right: auto\" title=\"018\" border=\"0\" alt=\"018\" src=\"http:\/\/ladyjessop.com\/wp-content\/uploads\/2010\/09\/018_thumb.jpg\" width=\"300\" height=\"226\" \/><\/a> <\/p>\n<p>Combine dry ingredients into a large bowl.&#160; Add dissolved yeast and start mixing with a wooden spoon.&#160; Add up to a cup of the remaining water.&#160; Mix with wooden spoon until well blended.&#160; This should take about 5 minutes at the most.&#160; No kneading necessary!&#160; Dough should be soft and sticky.<\/p>\n<p>Cover bowl and set in a warm spot until the dough doubles in size.&#160; It takes about 45 minutes in my kitchen (about the length of one DVR-d episode of <em>The Ghost Whisperer<\/em>), but Grandma\u2019s notes say it can take up to 4 hours.&#160; I usually coat my pan with cooking spray but you can also use butter (which is always better).&#160;&#160; DON\u2019T FORGET THIS STEP OTHERWISE YOUR BREAD WILL COME OUT LOOKING LIKE THIS:<\/p>\n<p align=\"left\">&#160;<img loading=\"lazy\" decoding=\"async\" style=\"border-bottom: 0px; border-left: 0px; display: block; float: none; margin-left: auto; border-top: 0px; margin-right: auto; border-right: 0px\" title=\"Bread pan not greased\" border=\"0\" alt=\"Bread pan not greased\" src=\"http:\/\/ladyjessop.com\/wp-content\/uploads\/2010\/09\/Breadpannotgreased_thumb.png\" width=\"235\" height=\"312\" \/><\/p>\n<p align=\"left\">(Unfortunate results such as this must be followed by at least 5 perfect subsequent loaves in order to silence the ranting of one\u2019s husband.)&#160; <\/p>\n<p>Cover pan with a glass dome lid and let rise again.&#160; If you are wondering what the fuck you are supposed to use for a \u201cglass dome lid\u201d that will fit over a bread pan try something like this:<\/p>\n<p>&#160;<a href=\"http:\/\/ladyjessop.com\/wp-content\/uploads\/2010\/09\/004.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right-width: 0px; display: block; float: none; border-top-width: 0px; border-bottom-width: 0px; margin-left: auto; border-left-width: 0px; margin-right: auto\" title=\"004\" border=\"0\" alt=\"004\" src=\"http:\/\/ladyjessop.com\/wp-content\/uploads\/2010\/09\/004_thumb.jpg\" width=\"393\" height=\"296\" \/><\/a>&#160;<\/p>\n<p>The bread has \u201criz\u201d enough when it runs over the sides* but I do not recommend this because it\u2019s a bitch to get out of the pan.&#160; Let it rise until it is just slightly over the top.&#160; Grandma\u2019s notes say absolutely nothing about how long this takes.&#160; Just watch it closely.&#160; In my kitchen it takes about 15-20 minutes (about the length of one DVR-d episode of <em>Cougar Town<\/em>) on top of the oven which is preheating to 400 degrees.&#160; I end up with a beautiful loaf of freshly baked bread that looks like this:<\/p>\n<p><a href=\"http:\/\/ladyjessop.com\/wp-content\/uploads\/2010\/09\/007.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-bottom: 0px; border-left: 0px; display: block; float: none; margin-left: auto; border-top: 0px; margin-right: auto; border-right: 0px\" title=\"007\" border=\"0\" alt=\"007\" src=\"http:\/\/ladyjessop.com\/wp-content\/uploads\/2010\/09\/007_thumb.jpg\" width=\"244\" height=\"184\" \/><\/a><\/p>\n<p>\u2026and slides out of the pan painlessly like this:<\/p>\n<p><a href=\"http:\/\/ladyjessop.com\/wp-content\/uploads\/2010\/09\/009.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-bottom: 0px; border-left: 0px; display: block; float: none; margin-left: auto; border-top: 0px; margin-right: auto; border-right: 0px\" title=\"009\" border=\"0\" alt=\"009\" src=\"http:\/\/ladyjessop.com\/wp-content\/uploads\/2010\/09\/009_thumb.jpg\" width=\"340\" height=\"256\" \/><\/a> <\/p>\n<p>The resulting bread has a spongy middle and chewy crust that makes great toast and is also a perfect bread for paninis or grilled cheese sandwiches.&#160; It\u2019s also good for restoring faith in husbands who might otherwise think you are a disaster in the kitchen.&#160;&#160; <\/p>\n<p>&#160;<\/p>\n<\/p>\n<p>*Please forgive obscure <em>Little Women<\/em> reference said by Jo March:&#160;
